Pomegranate Chocolate Bark

Directions

Add the first 3 ingredients to a bowl and mix well until you have a uniform consistency. Pour mixture into a parchment or Saran Wrap lined pan. Pour pomegranate seeds evenly across the chocolate and push them down gently. Sprinkle with sea salt. Place chocolate bark in the freezer for 20 minutes. Break chocolate sheet apart carefully with the pomegranate side facing down so you don't squirt yourself with juice from the seeds! Store leftover chocolate bark in an air-tight container in the freezer.

 

Extra Fluffy Blueberry Almond Pancakes

Directions

In a small bowl, combine flour, baking powder, baking soda, ground almonds, sugar, and lemon zest. Set aside a large bowl, whisk together yogurt and milk. Add egg and almond extract and mix until smooth. Combine wet and dry ingredients. Fold in slivered almonds and blueberries. Heat a frying pan over medium heat; spray with oil. Cook ¼ cup pancake portions for 2 minutes on the first side (or until edges have set and bottom is golden). Flip and cook for 1 minute on the other side (or until golden and cooked through).

 

Secretly Healthy Banana Bread

Directions

Optional mix-ins (chocolate chips, dried cherries or cranberries, pecans, walnuts, etc.) Grease two 8 inch loaf pans or a 10 inch loaf pan. Preheat the oven to 350º F. Mix together the eggs, honey, applesauce, and vanilla. Mix together the flour, salt, soda, powder, and cinnamon and add to the wet ingredients. Stir in the mashed bananas and mix well. Add in any mix-ins. Divide even in the pans and bake about 45 minutes for two loaves or an hour for one (until a toothpick comes out clean or with a few crumbs attatched).

 

Double Chocolate Protein Crepes

Directions

Combine all crepe ingredients in a blender and mix until batter is smooth. Heat non-stick skillet or pan on the stovetop over medium heat. Spray with cooking spray and pour about ½ of the crepe batter on the pan. Cook until small bubbles form then flip and cook on the other side. Combine all protein fluff ingredients in a small bowl and stir until well incorporated. Once crepes are cooled, evenly distribute the protein full filling inside and on top of the two crepes. Top crepes with cacao nibs, chocolate sauce, and Quest bar chunks. .

 

Avocado Banana Bread

Directions

Preheat the oven to 350 degrees and grease a standard loaf pan. In a large bowl combine flours, baking soda, and salt. In a medium bowl, combine the egg, banana, avocado, honey, sugar and vanilla. Add banana mixture to flour mixture, stir until blended together. Pour the batter into greased baking pan and top with chocolate chips if desired. Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.

 

Cacao Overnight oats

Directions

Simply soak the oats, chia seeds & berries in almond milk and place in the fridge overnight. To make the ice cream, remove the frozen bananas from the freezer for 10 minutes to thaw then blend until smooth and creamy and add the cacao powder. Layer up and enjoy!
